RECIPES OF THE WORLD: PUMPKIN CROQUETTES

Well okay, this recipe is not very very ethnic, but hey, if someone is reading us from Tasmania, Congo or Guyana, you may find it an exotic tad, isn't it? It turns out that the bread of bread expired, and since the thing is not to throw anything, and I did not feel like a sandwich of ham and cheese I thought “Oh yes I have pumpkin” uahahahaha I let out an evil giggle and it occurred to me to do an experiment: croquettes of pumpkin!

Here we explain one easy and simple recipe so that you can cook this delight of pumpkin croquettes:

Ingredients

  • 300 grams of pumpkin
  • 3-4 slices of bread (we use whole wheat, but you can use white bread too)
  • 2 large tablespoons of philadelphia cheese
  • about 20 squares of cheese (we use gouda)
  • 1/2 onion
  • bread crumbs
  • milk
  • Salt
  • pepper (optional)
  • parsley (optional)
  • frying oil

Elaboration

1. Cut the squash and onion into small squares and sauté in a pan with olive oil.

2. We wet the slices of bread with a stream of milk (eye that you just have to bathe the bread, not drown it!).

3. Once the pumpkin is tender we let it cool.

4. Add the pumpkin, onion, salt (and if you want pepper and parsley) to the bread with milk and mix everything.

5. Add the philadelphia cheese and cheese squares (if the dough is too liquid we can add breadcrumbs).

6. We form some balls, pass them through the breadcrumbs and fry them in hot oil.

Variants: if you don't like pumpkin (but cheeee how not?) You can replace it with zucchini.
